Ingredients and Spices for Indonesian Sambal - Paste / Hot Spice (vegan):

  1. 400 g of crushed red pepper
  2. 20 Thai peppers (optional)
  3. 15 minced garlic
  4. 5-6 chopped onions
  5. 2 tomatoes or 10 cherry tomatoes
  6. 1/2 lemon (or lime) - use juice
  7. 1 tablespoon of Himalayan salt
  8. 1 teaspoon of white pepper
  9. 2 tablespoons Knorr Chicken (optional)
  10. 1 cup oil (add more if needed)
  11. 1/8 cup Gula Jawa / Brown Sugar

Indonesian Sambal Preparation Steps - Light Paste / Spicy Chili (Vegan)

  1. Below are the components (not all) of the appearance of Gula Jawa, usually cylindrical in shape. The second is brown sugar.
  2. Heat a wok, add oil. Meanwhile, use a blender to blend all the ingredients (I like to do this until smooth, some prefer not too much, with fingertips). Start cooking. Roughly, the dough should float in the oil (see photo). It takes an hour and 1.5 hours on medium heat. Stir occasionally (I start the timer at 30 minutes and gradually increase it to 15 minutes to beat). sometimes i add oils.
  3. After an hour, it should look like this, darker and slightly brighter. This means, when you try to add everything you are missing (sugar, salt ...), the pasta should gradually lose all its water and you can see that the oil starts to separate. It usually took me 1.5 hours. And it will last more than 2 months in the refrigerator.
  4. Note 1. I use Thai chili, which is optional. 2. The type of sugar can be anything from plain white sugar, the word Gula Jawa originally means coconut (palm) sugar, or we also used palm sugar (found in an Asian supermarket). Can be replaced with brown sugar. FYI: This is not the same as palm sugar (because it tastes more sour, but you can certainly try it). 3. You can freeze this, I prefer to freeze it in batches knowing it will be ready for a few weeks.
  5. If you don't like it too spicy, leave out the chili seeds and use more tomatoes.
