How to make Restaurant Style Coriander Noodle Soup
- For soup: Take a deep pot or cast iron kadai and add 1-2 tbsp of oil. You can take vegetable oil, or olive, or rice or sesame. Now add chopped garlic, ginger and fry for 30 seconds. Now add the chopped onions and fry for 1 minute. Now add chopped cilantro (chopped stem) and cook for another minute. Now add the fried cabbage, carrots and peppers. Fry for 1-2 minutes. Now add salt to taste and 1 tbsp. Black pepper. Prepare the vegetables.

- Now add a pot of water (or quantity) to the vegetables. Mix well. Boil. After the water boils, take 2-3 teaspoons of cornstarch in a bowl and add 2-3 teaspoons of water to the soup. Now add this mixture to the soup. Now boil and cover with a lid.
- Add the juice of 2 lemons and cilantro to the soup. Boil another 5 minutes. Now the soup is ready and you can add Chinese soup as you like. But I prefer not to add Chinese sauce because the real soup has this taste.

- For the Garlic Chili Noodles: Boil a packet of plain noodles with 1-2 teaspoons of salt and 1-2 tablespoons of oil. Boil the noodles only 70-80%. Do not boil it too well. When the noodles boil, drain immediately and add 1-2 teaspoons of oil. Loosen them very carefully with your hands. Leave it aside. Ensure that access to water is fully achieved.
- Now take a tadka pan and add 2-3 tbsp of oil. Add 2-3 whole red peppers and stir with a spoon until the red peppers change color. Turn off the gas as soon as the oil turns a little brown. It's hot oil for noodles. Now drain the oil. Now we don't need red peppers because the flavor and color are in the oil.
- Now take a black iron or flat pan and add chili oil. When the oil is hot, add the minced garlic and ginger. You can add more oil depending on the size of the vegetables and noodles. Now add the chopped onion and fry well. Chinese cooking is a hot fire, so make sure the fire is very hot. Fry the onions for a minute. Now add the cabbage, carrots and peppers. Fry them for another 2-3 minutes. Now add salt, 1 teaspoon red chili powder (DG), 1 teaspoon black pepper in this step and mix well.

- Now, if you have masala ching noodles, add 1-2 teaspoons of masala noodles. This section is optional. Now take the noodles and add them to the vegetables. Now don't mix the noodles with spoon or karch. Use tongs or a large fork to mix the noodles with the vegetables well. Add this step, you can add 1-2 teaspoons of soy sauce and 1-2 teaspoons of red chili sauce. If you are using ching masala noodles, you can add soy sauce. Do not add too much soy sauce, these noodles are not black.

- Now cook the noodles thoroughly with tongs or a fork for another minute and switch off the gas.

- Serve soup and noodles in the restaurant!!
