How to make vegan chili con carne
- Finely chop the onion, finely chop the bell pepper. Heat oil in a large skillet over medium-high heat. Add onion and pepper and fry for 3-4 minutes. Stir often.

- Crush the garlic and jalapenos in a mortar or food processor until a paste forms. Or very finely chopped.
- Add the garlic and jalapenos to the skillet along with 2 tablespoons chili powder, 1 tablespoon ground cumin, 1 heaping teaspoon paprika, and a pinch of salt and pepper. Mix well.

- Add all the chopped tomatoes and 500 ml of water to a saucepan and stir. Then bring the pot to a boil.
- Then add the lentils with another pinch of salt and pepper. Reduce heat and simmer covered for 15 minutes. Keep an eye on it, stir occasionally to make sure it's not sticky, and if it seems too dry you can add more water, but I didn't find it necessary.

- Then add the beans and chickpeas, as well as 1 tablespoon ground cumin and 1 tablespoon chili powder, to the pot. I know it looks like a lot of chili powder, but with all the tomatoes, it's the perfect amount.

- Cook for 30 minutes, then remove from stove. Finely chop the cilantro and mix. Then serve with rice of your choice.
